    In a large pot over medium heat, add diced dry-cured bacon. Cook until the bacon becomes crispy.

    Add the finely chopped onion and diced celery to the pot. Sauté for about 5 minutes, or until the onions become translucent.

    Stir in the cubed potatoes and pour in the chicken or clam broth. Add the bay leaves, then bring the mixture to a boil.
