    Prepare the bacon

    In a skillet over medium heat, cook the smoked bacon slices until crispy, about 6-8 minutes. Drain on paper towels and crumble them once they have cooled.

    Roast the tomatoes

    Preheat your oven to 400°F (200°C). Cut the tomatoes in half, place them on a baking sheet, and drizzle with a bit of olive oil and a sprinkle of salt. Roast for about 20-25 minutes or until they are slightly caramelized.

    Soft boil the eggs

    Bring a pot of water to a boil. Gently add the eggs and cook for 6-7 minutes. Remove from heat and place the eggs in ice water to stop the cooking. Once cooled, peel them and cut them in half.

    Make the vinaigrette

    In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well combined.

    Assemble the salad

    In a large salad bowl, layer the mixed salad greens at the bottom. Top with crumbled bacon, roasted tomatoes, sliced avocado, soft-boiled egg halves, and crumbled blue cheese. Drizzle with the parmesan vinaigrette and sprinkle with grated parmesan cheese.

    Serve

    Toss the salad gently to combine everything and serve immediately with additional vinaigrette on the side if desired.
