Shuck and chill oysters
Rinse oyster shells under cold running water and scrub to remove grit. Hold an oyster cup-side down in a towel or wear a shucking glove. Insert an oyster knife at the hinge, twist to pop, slide the knife along the top shell to sever the muscle and remove the top shell. Run the knife under the oyster to free it from the bottom shell, leaving the oyster in its deep half-shell. Transfer each shucked oyster onto a tray of crushed ice spaced so shells sit level and the liquor is retained. Keep oysters refrigerated on ice until serving (up to 1–2 hours). Discard any oysters that smell foul or have open shells that do not close when tapped.

Prepare serving platter
Arrange a serving platter or shallow bowl with a thick layer of crushed ice or a bed of rock salt to stabilize shells. Distribute shucked oysters on the ice, cup side down so the liquor pools in the shell. Keep platter refrigerated until ready to serve; assemble mignonette and horseradish while oysters chill.
Classic Mignonette

Combine red wine vinegar (4 tbs) with the minced shallot (3 tsp) in a small bowl. Add freshly ground black pepper (1 tsp), sea or kosher salt (1 tsp), and sugar (1 tsp) if using. Whisk briefly to dissolve salt and sugar. Taste and adjust: if too sharp, add up to 1 more teaspoon sugar or a splash (1–2 tsp) of water. Cover and refrigerate for at least 15 minutes to allow flavors to meld; can be made up to 24 hours ahead. Stir before serving.
Horseradish & Lemon

Spoon prepared horseradish into a small bowl. For a milder, creamier horseradish, fold in 1–2 teaspoons of lemon juice (from the fresh lemons) and a pinch of salt; leave some straight horseradish for those who prefer stronger heat. Cut one lemon into wedges for serving and squeeze the other lemon(s) to provide fresh lemon juice in a small ramekin if you want pre-squeezed juice available. Keep horseradish and lemon wedges chilled until serving.

Just before serving, give the mignonette one quick stir. Place small spoons or condiment forks next to the mignonette and horseradish. Optionally sprinkle a few microgreens or chopped chives (2 tbsp) lightly over oysters for color and a subtle onion note, and finish with a light dusting of cracked black pepper (1/2 tsp) if desired. Serve oysters on the bed of ice with mignonette, horseradish, fresh lemon wedges, and additional condiments. Encourage guests to spoon a small amount of mignonette or horseradish (or a squeeze of lemon) onto each oyster and consume immediately.

Storage notes: keep any leftover, unopened oysters refrigerated and consume according to local seafood safety guidelines. Discard opened oysters after two hours at room temperature or after 24 hours refrigerated.
