Prepare the Pie Crust
In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water, mixing until the dough comes together. Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Assemble the Pies
Preheat the oven to 375°F (190°C). Roll out one disc of dough on a floured surface to fit your pie pan. Place the rolled dough in the pan and fill with your chosen filling. Roll out the second disc for the top crust, crimp the edges to seal, and cut slits for steam to escape. Brush with an egg wash for a golden finish.

Bake the Pies
Bake in the preheated oven for 45-50 minutes or until the crust is golden brown and the filling is bubbly. Let cool before serving.
