Preparation
- 1
Prepare the Pie Crust
Preheat the oven to 425°F (220°C). Roll out one pie crust and place it in a 9-inch pie dish. Trim the edges and set aside.
- 2
Make the Filling
In a large mixing bowl, combine fresh blueberries, sugar, cornstarch, lemon juice, cinnamon, and a pinch of salt. Toss gently until the blueberries are evenly coated.
- 3
Assemble the Pie
Pour the blueberry mixture into the prepared pie crust. Roll out the second pie crust and place it over the filling. Cut slits for steam vents or create a lattice top.
- 4
Bake the Pie
Bake in the preheated oven for 20 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 25-30 minutes, until the filling is bubbly and the crust is golden brown.
- 5
Cool and Serve
Allow the pie to cool for at least 2 hours before serving to let the filling set. Serve with whipped cream or vanilla ice cream if desired.
