    Prepare the Filling

    In a large bowl, combine the ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and pepper. Mix until well combined.

    Assemble the Dumplings

    Place a dumpling wrapper on a clean surface. Spoon about 1 tablespoon of the filling into the center of the wrapper. Moisten the edges with water and fold the wrapper over to create a half-moon shape. Press the edges to seal and create pleats if desired. Repeat with remaining wrappers and filling.

    Cook the Dumplings

    You can either steam, boil, or pan-fry the dumplings. To steam, place them in a steamer basket over boiling water and steam for about 10-12 minutes until cooked through. To boil, gently drop them in boiling water and cook for 5-7 minutes. To pan-fry, heat a non-stick skillet with a bit of oil, add dumplings, and cook until golden brown on the bottom, then add a little water, cover, and steam for about 5-7 minutes.

    Make the Ponzu Sauce

    In a small bowl, mix together soy sauce, rice vinegar, citrus juice (like lemon or lime), and a dash of mirin (optional). Adjust the taste as needed.

    Serve the dumplings warm with the ponzu sauce on the side for dipping.
