    In a bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, lemon juice, salt, and black pepper. Mix well to create a marinade.

    Marinate the Lamb

    Place the lamb in a large resealable bag or a shallow dish. Pour the marinade over the lamb, ensuring it is well coated. Seal the bag or cover the dish and marinate in the refrigerator for at least 2 hours, preferably overnight.

    Preheat the Grill or Oven

    If grilling, preheat your grill to medium-high heat. If roasting, preheat your oven to 180°C (350°F).

    Grill or Roast the Lamb

    Remove the lamb from the marinade and let any excess drip off. If grilling, place the lamb on the grill and cook for about 20-25 minutes per side for medium-rare, or until desired doneness. If roasting, place the lamb in a roasting pan and cook for approximately 1.5 to 2 hours, or until the internal temperature reaches 60°C (140°F) for medium-rare.
