Prepare the Pork Belly
Cut the pork belly into small cubes and season with salt and black pepper. In a skillet over medium heat, cook the pork belly until crispy, about 10-15 minutes. Remove from the skillet and drain on paper towels.

Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and cut them in half. Bring a pot of salted water to a boil and blanch the Brussels sprouts for 3-4 minutes until bright green. Drain and set aside.

Fry the Shallots
Thinly slice the shallots and fry them in the same skillet used for the pork belly, adding a little more oil if necessary. Cook until golden brown and crispy, about 5 minutes. Remove and drain on paper towels.

Make the Glaze
In a bowl, combine sambal oelek, soy sauce, and honey. Mix well to create the glaze.

Fry the Brussels Sprouts
In the skillet, heat vegetable oil over medium-high heat. Add the blanched Brussels sprouts and fry until crispy and golden brown, about 5-7 minutes. Drain on paper towels.

Combine and Serve
In a large bowl, toss the fried Brussels sprouts with the crispy pork belly and sambal glaze. Top with fried shallots and serve immediately.
