    Prepare the Oven

    Preheat your oven to 325°F (160°C).

    Infuse the Cream

    In a saucepan, combine the heavy cream and split vanilla bean (scrape the seeds into the cream). Heat over medium until just simmering. Remove from heat and let steep for 15 minutes.

    Whisk Egg Yolks and Sugar

    In a mixing bowl, whisk together the egg yolks, granulated sugar, and a pinch of salt until the mixture is pale and slightly thickened.

    Combine Mixtures

    Slowly pour the warm cream mixture into the egg yolk mixture, whisking constantly to prevent curdling. Strain the mixture through a fine sieve into a large measuring cup or bowl.

    Prepare Ramekins

    Place 4-6 ramekins in a baking dish and fill each ramekin with the custard mixture. Add hot water to the baking dish until it comes halfway up the sides of the ramekins.

    Bake

    Bake in the preheated oven for about 30-35 minutes, or until the edges are set but the centers still jiggle slightly.

    Cool and Refrigerate

    Remove from the oven, let cool to room temperature, then refrigerate for at least 2 hours or overnight.

    Caramelize the Sugar

    Before serving, sprinkle about 1 tablespoon of granulated sugar on top of each custard. Use a kitchen torch to caramelize the sugar until it forms a rich, golden crust. Alternatively, place under a broiler for 1-2 minutes, watching closely.

    Let the brûlée sit for a minute for the sugar to harden, then serve immediately.
