Prepare the Crust
Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs and melted butter, mixing until well combined. Press the mixture into the bottom of a 9-inch springform pan to form an even crust. Bake in the preheated oven for 10 minutes, then remove and let cool.

Make the Filling
In a large bowl, beat the cream cheese and granulated sugar together until smooth. Add the sour cream, vanilla extract, and eggs one at a time, mixing well after each addition. Pour the filling over the cooled crust.

Bake the Cheesecake
Bake the cheesecake in the oven for approximately 50-60 minutes, or until the center is set and the edges are lightly golden. Remove from the oven and allow to cool at room temperature, then refrigerate for at least 4 hours, preferably overnight.

Prepare the Berry Sauce
In a small saucepan, combine the mixed berries and lemon juice. Cook over medium heat until the berries break down and the mixture thickens, about 10-15 minutes. Remove from heat and let cool.

Serve
Once the cheesecake is fully chilled, remove it from the springform pan. Slice and serve with the berry sauce drizzled on top.
