Directions

  1. 1

    Prepare the Stone Fruit

Preheat your grill to medium-high heat. Cut the stone fruit in half and remove the pit. Brush the cut sides lightly with olive oil. Grill the fruit cut-side down for about 3-4 minutes until grill marks appear and the fruit is slightly softened. Remove from grill and let cool.

  2. 2

    Assemble the Salad

On a serving platter, arrange the arugula as the base. Tear the burrata into pieces and place it on top of the arugula.

  3. 3

    Add Grilled Fruit and Prosciutto

Slice the grilled stone fruit into wedges and arrange them around the burrata. Drape the prosciutto slices over the salad.

  4. 4

    Drizzle and Season

Drizzle the extra virgin olive oil and aged balsamic vinegar over the salad. Season with fresh cracked pepper and Maldon salt to taste.

  5. 5

    Serve

Serve immediately as a refreshing appetizer or light main dish.
