Beef Tenderloin

Method

Cooking Instructions

  1. 1

    Prepare the Beef

Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt and black pepper on all sides.

  2. 2

    Sear the Beef

In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the beef tenderloin and sear for 3-4 minutes on each side until browned.

  3. 3

    Add Aromatics

Add garlic cloves and fresh rosemary to the skillet, cooking for an additional minute to infuse the flavors.

  4. 4

    Roast in the Oven

Transfer the skillet to the preheated oven. Roast for 20-25 minutes or until the internal temperature reaches 130°F (54°C) for medium-rare.

  5. 5

    Rest the Meat

Once done, remove from the oven and let the beef rest for 10 minutes before slicing.

  6. 6

    Make the Red Wine Reduction

In the same skillet, add red wine and beef stock. Bring to a simmer over medium heat, scraping up any browned bits. Reduce by half, about 10 minutes.

  7. 7

    Serve

Slice the beef tenderloin and serve with the red wine reduction drizzled over the top.
