    Prepare the Onions

    Peel and thinly slice the yellow onions. In a large pot, melt the butter over medium heat. Add the onions and cook, stirring frequently, until they are caramelized and golden brown (about 30 minutes).

    Deglaze and Simmer

    Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Add the beef broth, bay leaves, thyme, salt, and black pepper. Bring to a simmer and cook for 20 minutes.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into thick slices and toast them until golden brown.

    Assemble the Gratinée

    Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls, top each with a slice of toasted baguette, and then sprinkle with equal parts of the four cheeses.

    Broil

    Place the bowls under the broiler for about 5-7 minutes or until the cheese is melted and bubbly. Keep an eye on it to avoid burning.
