    Prepare the Marinade

    In a bowl, combine Greek yogurt, minced garlic, olive oil, paprika, salt, and black pepper. Whisk until smooth.

    Marinate the Steak

    Place the prime skirt steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight.

    Cook the Kebap

    Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and let excess drip off. Grill for about 4-5 minutes on each side for medium-rare, or to your desired doneness. Remove from heat and let rest for 5 minutes. Slice against the grain.

    Garnish

    Sprinkle freshly chopped parsley over the sliced kebap before serving.

For the Crispy Shaved Potatoes

    Prepare the Potatoes

    Using a mandoline or a sharp knife, shave the potatoes into thin slices. Rinse the slices in cold water to remove excess starch and pat dry with paper towels.

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato slices to the hot oil in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes. Use a slotted spoon to transfer the fried potatoes to a paper towel-lined plate.

    Season and Serve

    Immediately sprinkle the fried potatoes with salt and pepper while they are still hot. Serve alongside the yogurt kebap.
