Prepare Hummus

    Blend Ingredients

    In a food processor, combine the canned chickpeas, tahini, garlic cloves, lemon juice, olive oil, salt, and water. Blend until smooth, scraping down the sides as needed. If the hummus is too thick, add more water, a tablespoon at a time, until desired consistency is reached.

    Taste and Adjust

    Taste the hummus and adjust the seasoning by adding more salt or lemon juice if necessary. Blend again until smooth.

Prepare Toppings

    Sauté Pine Nuts

    In a small skillet over medium heat, add the pine nuts and toast for about 2-3 minutes, stirring frequently, until they are golden brown and fragrant. Remove from heat and set aside.

    Prepare Paprika Butter

    In the same skillet, melt the butter over low heat. Once melted, add the paprika and stir until well combined. Remove from heat.

    Slice Pastrami

    Thinly slice the dried beef pastrami into bite-sized pieces.

    In a serving bowl, spread the hummus evenly. Top with the sliced pastrami, toasted pine nuts, and drizzle the paprika butter on top. Garnish with fresh parsley.
