Prepare the Infusion

Begin by slicing the grapefruit in half and juicing one half. Reserve the juice and cut the other half into wedges for garnish. In a clean glass jar, combine the grapefruit wedges, fresh basil leaves, and the Condesa. Seal the jar and let it infuse in the refrigerator for at least 4 hours, preferably overnight.

Mix the Cocktail

In a shaker filled with ice, combine 50 ml of Gin Clasica, 10 ml of Rhubarb Bitter, and 30 ml of the grapefruit and basil infusion (strained to remove solids). Shake well for about 15 seconds until chilled.

Serve

Fill a highball glass with ice cubes. Strain the cocktail mixture into the glass over the ice. Top with 150 ml of Fever Tree Mediterranean Tonic. Stir gently to combine.

Garnish and Enjoy

Garnish with a wedge of grapefruit and a fresh basil leaf. Serve immediately and enjoy your refreshing 'The Morris' cocktail.
