    Prepare the Potatoes

    Peel and cut the Russet potatoes into quarters. Place them in a pot of salted water and bring to a boil. Cook until fork-tender, about 15-20 minutes.

    Char the Potatoes

    Drain the potatoes and let them cool slightly. Heat olive oil in a large skillet over medium-high heat. Add the potatoes and cook until they are golden brown and charred on the outside, about 5-7 minutes. Remove from heat and shred the potatoes with a fork.

Burnt Butter

    Make Burnt Butter

    In a small saucepan, melt the unsalted butter over medium heat. Continue cooking until the butter turns a golden brown color and develops a nutty aroma, about 5-7 minutes. Be careful not to burn it. Remove from heat and set aside.

Spicy Yogurt

    Prepare the Spicy Yogurt

    In a bowl, combine the plain yogurt, minced garlic, smoked paprika, diced Turkish long peppers, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly combined.

Assembly

    Combine All Components

    On a serving plate, spread the shredded, charred potatoes. Drizzle the burnt butter over the potatoes. Top with the spicy yogurt mixture, spreading it evenly. Garnish with additional diced Turkish long peppers if desired.
