    Cook the Orzo

    Bring a pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

    Chop the Vegetables

    While the orzo is cooking, rinse the fresh spinach and roughly chop it. Clean the scallions and slice them thinly, separating the white parts from the green tops. Mince the garlic cloves.

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and the white parts of the scallions to the skillet. Sauté for about 1-2 minutes until fragrant.

    Add the Spinach

    Add the chopped spinach to the skillet and cook for another 3-4 minutes, stirring frequently, until the spinach is wilted.

    Combine with Orzo

    Add the cooked orzo to the skillet with the sautéed spinach and garlic. Toss to combine and heat through.

    Add Seasonings

    Drizzle the lemon juice over the orzo mixture and add salt and black pepper to taste. Mix well to combine all ingredients.

    Finish with Feta

    Remove the skillet from heat and crumble the feta cheese over the top. Gently stir to combine, allowing the cheese to melt slightly into the warm mixture.

Serving

    Serve

    Transfer the Spanaki to a serving dish and garnish with the green parts of the scallions. Serve warm.
