Prepare Labneh Sauce

    Make Labneh

    In a bowl, mix the yogurt and salt. Line a sieve with cheesecloth and place it over a bowl. Pour the yogurt mixture into the sieve and let it drain in the refrigerator for at least 12 hours, or until thickened.

    Finish Labneh

    Once drained, transfer the labneh to a serving bowl. Drizzle with olive oil and set aside for serving.

Prepare Sweet Syrup

    Make Syrup

    In a saucepan, combine water, sugar, honey, and vanilla extract. Bring to a boil over medium heat, stirring occasionally until the sugar dissolves. Reduce heat and let it simmer for about 10 minutes until slightly thickened. Remove from heat and let cool.

Assemble Baklava

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Prepare Phyllo Dough

    Melt the butter in a small saucepan. Carefully unroll the phyllo dough and cover it with a damp cloth to prevent it from drying out. Brush a 9x13 inch baking dish with melted butter.

    Layer Phyllo

    Place one sheet of phyllo dough in the prepared dish, brushing it with melted butter. Repeat this process for 8 sheets, brushing each layer with butter.

    Add Filling

    In a mixing bowl, combine the cooked short ribs, chopped Gaziantep pistachios, and shredded Kasseri cheese. Spread this filling evenly over the layered phyllo dough.

    Top with Phyllo

    Continue layering the phyllo dough on top of the filling, brushing each layer with butter, until you reach a total of 16 layers.

    Cut Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking.

    Bake Baklava

    Bake in the preheated oven for 45-50 minutes, or until golden brown and crisp.

    Add Syrup

    Once out of the oven, immediately pour the cooled syrup over the hot baklava, ensuring even coverage. Allow it to soak for at least 30 minutes before serving.
