Prepare the Eggplant

    Dice the Eggplant

    Cut the eggplant into small cubes and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture, then rinse and pat dry.

    Cook the Eggplant

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced eggplant and sauté for about 5-7 minutes until golden and tender. Remove it from the pan and set aside.

Make the Shakshuka

    Prepare the Base

    In the same skillet, add another tablespoon of olive oil. Add the sofrito and cook for about 3-4 minutes until fragrant.

    Add Tomato Sauce and Spices

    Pour in the tomato sauce, and add the cumin, salt, and black pepper. Stir to combine and let it simmer for 5 minutes.

    Combine Ingredients

    Add the sautéed eggplant back into the skillet and mix well. Make two small wells in the mixture and crack an egg into each well.

    Cook the Eggs

    Cover the skillet with a lid and let it cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.

Grill the Bread

    Prepare the Bread

    While the shakshuka is cooking, heat a small pan over medium heat. Spread butter or olive oil on one side of each slice of bread.

    Grill the Bread

    Place the bread slices in the heated pan, oiled side down, and grill for about 2-3 minutes on each side until golden brown.

Serve

    Plate the Dish

    Once the eggs are cooked, remove the skillet from heat. Serve the shakshuka hot, garnished with fresh herbs if desired, alongside the grilled bread.
