Slice the Cheese
Cut the Aged Kasseri cheese into thick slices, about 1.5 cm (0.6 inches) thick.

In a shallow dish, combine the all-purpose flour, salt, and ground black pepper. Mix well.

Heat the Oil
In a large frying pan, heat the olive oil over medium heat until hot but not smoking.

Coat the Cheese
Dredge each slice of cheese in the flour mixture, ensuring both sides are well-coated. Shake off any excess flour.

Fry the Cheese
Carefully add the coated cheese slices to the hot oil. Fry for about 2-3 minutes on each side or until golden brown and melted inside.

Drain Excess Oil
Once done, transfer the fried cheese to a paper towel-lined plate to drain any excess oil.

Garnish and Serve
Serve immediately with lemon wedges and a sprinkle of fresh parsley if desired.
