Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

    Mix Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the frothy yeast mixture and olive oil. Mix until a dough begins to form.

    Knead Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic.

    Let Dough Rise

    Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

Filling Preparation

    Prepare Filling

    In a mixing bowl, combine Kasseri cheese, sliced mushrooms, truffle oil, chopped parsley, and black pepper. Mix well until all ingredients are evenly distributed.

Assembly and Baking

    Preheat Oven

    Preheat your wood-fired oven to 500°F (260°C). If using a conventional oven, preheat to the highest setting.

    Shape Pide

    Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into an oval shape about ¼ inch thick.

    Add Filling

    Place a generous amount of the filling mixture along the center of each oval dough. Fold the edges of the dough over the filling to create an enclosed boat shape.

    Bake Pide

    Carefully transfer the pide to the hot oven. Bake for about 10-15 minutes or until the edges are golden brown and the cheese is melted.

    Remove the pide from the oven, let it cool slightly, and serve warm, drizzled with additional truffle oil if desired.
