    Marinate the Ribeye

    Cut the ribeye steak into 1-inch cubes. In a bowl, combine olive oil, minced garlic (press the garlic cloves), lemon juice, sumac, paprika, salt, and black pepper. Add the ribeye cubes to the marinade, ensuring they are well coated. Cover and let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Prepare Onions

    While the steak is marinating, peel and cut the red onion into similar-sized cubes (about 1 inch). Set aside.

Grilling

    Skewer the Ingredients

    Once the ribeye is marinated, take skewers (metal or soaked wooden skewers) and thread the marinated ribeye cubes alternating with pieces of red onion.

    Preheat the Grill

    Preheat your grill or grill pan over medium-high heat. Brush with a little oil to prevent sticking.

    Grill the Skewers

    Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the beef is desired doneness (medium-rare to medium is recommended).
