Method
Mastic Pudding

Prepare the Mastic Pudding
In a saucepan, combine the milk, sugar, cornstarch, ground mastic, vanilla extract, and salt. Whisk together until smooth.

Cook the Mixture
Heat the saucepan over medium heat, stirring constantly until the mixture thickens and begins to bubble. This should take about 10 minutes.

Cool the Pudding
Remove the saucepan from heat and pour the pudding into serving cups. Allow it to cool to room temperature, then refrigerate for at least 2 hours until set.

Simmer the Mixture
Reduce the heat and let it simmer for another 5 minutes, stirring occasionally until the mixture thickens slightly. Remove from heat and let cool.
Balsamic Honey Caviar

Prepare the Balsamic Mixture
In a small saucepan, combine balsamic vinegar, honey, and water. Bring to a gentle boil.

Add Agar-Agar
Once boiling, add agar-agar and stir continuously for about 2 minutes until fully dissolved.

Create the Caviar
Using a dropper, drop the mixture into a bowl of cold oil or water. The droplets will form caviar-like beads. Let them sit for 10 minutes to set.

Make the Cookie Dough
In a mixing bowl, beat the softened butter and powdered sugar together until light and fluffy. Add vanilla extract and mix well.

Combine Dry Ingredients
Gradually add the flour and salt to the butter mixture, mixing until a dough forms.

Shape and Chill the Dough
Shape the dough into a log, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Bake the Cookies
Preheat the oven to 350°F (175°C). Slice the chilled dough into rounds and place them on a baking sheet lined with parchment paper. Bake for 12-15 minutes until lightly golden.

In a serving dish, layer the mastic pudding, followed by a spoonful of mixed berries compote, and top with balsamic honey caviar. Serve with sable cookies and garnish with fresh berries.
