Kofte (Meatballs)

Buttered Rice

Method

Kofte Preparation

  1. 1

    Mix the Meat

In a large mixing bowl, combine the ground beef and ground lamb. Ensure they are well mixed for a consistent texture.

  2. 2

    Add Vegetables and Spices

Add the grated onion, minced garlic, chopped parsley, cumin powder, paprika, salt, and black pepper to the meat mixture. Mix thoroughly using your hands or a spoon.

  3. 3

    Shape the Meatballs

Wet your hands with water to prevent sticking. Take a small amount of the meat mixture and shape it into oval or round meatballs, about 1-2 inches in diameter.

  4. 4

    Preheat the Grill

Preheat your grill to medium-high heat. Lightly brush the grill grates with olive oil to prevent sticking.

  5. 5

    Grill the Kofte

Place the meatballs on the grill and cook for 10-12 minutes, turning occasionally, until they are cooked through and have a nice char.

Buttered Rice Preparation

  1. 6

    Rinse the Rice

Rinse the basmati rice under cold water until the water runs clear. This helps to remove excess starch and prevents the rice from being sticky.

  2. 7

    Cook the Rice

In a medium saucepan, add the rinsed rice, water, and salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes.

  3. 8

    Add Butter

After 15 minutes, remove the saucepan from heat but keep it covered. Let it sit for 5 minutes. Then, add the butter and fluff the rice with a fork.
