Preparation of Vegetables

    Wash and Cut Vegetables

    Thoroughly wash all vegetables under cold water. Slice the cucumbers into spears or rounds, julienne the carrots, thinly slice the red onion, and chop the bell peppers into strips. Break the cauliflower into bite-sized florets.

    Pack Vegetables

    In a large glass jar or a suitable container, tightly pack the prepared vegetables. Make sure to leave some space at the top for the brine to cover them.

Making the Brine

    Combine Ingredients

    In a medium saucepan, combine the water, white vinegar, kosher salt, sugar, garlic cloves, black peppercorns, dill sprigs, mustard seeds, and red pepper flakes.

    Heat the Brine

    Bring the mixture to a boil over medium heat, stirring occasionally until the salt and sugar have completely dissolved.

    Cool the Brine

    Once boiling, remove the saucepan from heat and let the brine cool for about 10 minutes.

Pickling Process

    Pour the Brine

    Pour the cooled brine over the packed vegetables in the jar, ensuring all vegetables are submerged. If necessary, use a clean weight or a smaller jar to keep them submerged.

    Seal and Refrigerate

    Seal the jar tightly with a lid and refrigerate. Allow the pickles to marinate for at least 24 hours before consuming for best flavor.
