Prepare the Potatoes
Wash and peel the Russet potatoes. Cut each potato into thick strips or wedges, about 1/4 to 1/2 inch thick.

Dry the Potatoes
After soaking, drain the water and pat the potatoes dry with a clean kitchen towel.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Carefully add the dried potato strips to the hot oil in batches. Fry for about 5-7 minutes until golden brown and crisp. Remove them from the oil and place them on paper towels to drain excess oil.

Season
While the fries are still hot, sprinkle them with salt and freshly ground black pepper to taste.
Garlic Yogurt

Prepare the Yogurt
In a mixing bowl, combine the plain Greek yogurt, minced garlic cloves, lemon juice, and salt. Stir well to combine.

Add Fresh Dill
If using, chop the fresh dill and fold it into the yogurt mixture.

Mix the Ingredients
In a small bowl, combine the smoked paprika, olive oil, and salt. Mix well to form a paste.

Cook the Paprika
Heat a small pan over medium heat. Add the smoked paprika mixture and cook for about 1-2 minutes until slightly darkened and fragrant. Be careful not to burn it.
