Main Ingredients

Method

Preparation

  1. 1

    Prepare the Marinade

In a bowl, mix together the olive oil, lemon juice, minced garlic, salt, and black pepper to create the marinade.

  2. 2

    Marinate the Prawns

Add the tiger prawns to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Prepare the Vegetables

While the prawns are marinating, wash and prepare the asparagus by trimming the ends. Slice the sweet red peppers into strips. Chop the parsley finely.

Grilling

  1. 4

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 5

    Grill the Prawns

Remove the prawns from the marinade and place them on the grill. Grill each side for about 2-3 minutes or until they turn pink and opaque.

  3. 6

    Grill the Vegetables

While the prawns are grilling, toss the asparagus and sweet red peppers in a little olive oil, salt, and pepper. Grill them alongside the prawns for about 5-7 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once grilled, remove the prawns and vegetables from the grill and place them on a serving platter.

  2. 8

    Garnish

Sprinkle the chopped parsley over the grilled prawns and vegetables for added flavor and garnish.

  3. 9

    Serve

Serve hot with additional lemon wedges on the side if desired.
