Preparation of Octopus

    Rinse the octopus under cold water to remove any debris. If necessary, remove the beak and ink sac.

    In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes or until tender. Remove from water and let cool.

Marinade Preparation

    Prepare the Marinade

    In a bowl, whisk together the extra virgin olive oil, white wine vinegar, minced garlic, lemon juice, salt, black pepper, smoked paprika, and chili flakes.

    Marinate the Octopus

    Once the octopus is cooled, cut it into manageable pieces. Place the octopus in the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 1 hour.

Grilling

    Prepare the Grill

    Preheat your charcoal grill to high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

    Remove the octopus from the marinade, letting excess marinade drip off. Grill the octopus pieces for about 3-4 minutes on each side until charred and crispy.
