Preparing the Calamari

Clean the Calamari

Rinse the fresh calamari under cold water. Remove the head, tentacles, and innards. Slice the calamari bodies into rings about 1/2 inch thick.

Prepare the Breading

In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, and paprika. In another bowl, whisk together the eggs and milk until well combined.

Heat the Oil

In a deep skillet or pot, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat the Calamari

Dip each calamari ring first into the egg mixture, then into the flour mixture, ensuring they are fully coated.

Fry the Calamari

Carefully add the coated calamari rings into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until they turn golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Mix the Sauce

In a small bowl, combine mayonnaise, Sriracha sauce, lemon juice, and garlic powder. Mix well until smooth and adjust seasonings to taste.
