Fresh Artichoke Preparation

    Prep Artichokes

    Begin by preparing the fresh artichokes. Cut off the top inch of each artichoke and remove the tough outer leaves until you reach the tender inner leaves.

    Cut the artichokes in half and remove the fuzzy choke with a spoon. Place the cleaned artichokes in a bowl of water mixed with lemon juice to prevent browning.

    Cook Onions

    In a large skillet, heat the olive oil over medium heat. Add the sliced yellow onions and sprinkle with salt.

    Cook the onions slowly, stirring occasionally, for about 20-25 minutes until they are soft and caramelized, deep golden brown in color.

Flavor Enhancements

    Prepare Orange

    While the onions are caramelizing, peel and segment the navel orange, removing any seeds and the white pith. Set aside the segments.
