    Prepare the Vegetables

    Wash the green beans thoroughly and trim the ends. Peel and chop the onion finely. Mince the garlic cloves. Wash the tomatoes, remove the stems, and chop them into small pieces. Peel and cut the potato into cubes.

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until they become translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add the prepared green beans and potato cubes to the pot. Stir well to combine all ingredients.

    Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the green beans and potatoes are tender.
