Preparation of Lamb

    Marinate the Lamb

    In a large bowl, combine the lamb shoulder, salt, black pepper, cumin, paprika, minced garlic, and olive oil. Mix well to ensure the lamb is evenly coated with the marinade. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

    Chop the Vegetables

    While the lamb is marinating, chop the bell peppers, red onion, and cherry tomatoes into bite-sized pieces. Set aside.

Cooking

    Prepare the Wood-Fired Grill

    Prepare your wood-fired grill for high heat. Ensure the fire is well-established and the grill grates are clean.

    Grill the Lamb

    Remove the lamb from the marinade and place it on the grill. Cook for about 15-20 minutes, turning occasionally until the lamb is charred and reaches an internal temperature of 145°F (medium-rare).

    During the last 5-10 minutes of cooking the lamb, add the chopped bell peppers, red onion, and cherry tomatoes to the grill. Cook until they are tender and slightly charred.
