    Roast the Beetroot

    Preheat your oven to 400°F (200°C). Wrap the beetroot in foil and place it on a baking sheet. Roast for about 45-60 minutes, or until tender. Let them cool, then peel and chop.

    Prepare the Chickpeas

    Drain and rinse the canned chickpeas under cold water. This will help reduce the sodium content and improve the flavor of the hummus.

    Blend the Ingredients

    In a food processor, combine the roasted beetroot, chickpeas, tahini, garlic, lemon juice, olive oil, and salt. Blend until smooth. You may need to add a little water to achieve your desired consistency.

Garnishing

    Add Garnish and Serve

    Transfer the beetroot hummus to a serving bowl. Toast the pine nuts and sesame seeds in a dry skillet over medium heat until golden and fragrant. Sprinkle them on top of the hummus along with the chopped fresh mint leaves. Drizzle a little extra olive oil if desired.
