Prepare the Dough
In a large mixing bowl, cream together the unsalted butter and powdered sugar until light and fluffy. Add the egg yolk, vanilla extract, and salt. Mix until well combined.

Add Flour
Gradually add the all-purpose flour to the mixture, mixing until the dough comes together.

Chill the Dough
Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Bake the Cookies
Preheat the oven to 350°F (175°C). Roll out the chilled dough on a lightly floured surface to about 1/4 inch thick. Cut into desired shapes and place on a baking sheet lined with parchment paper. Bake for 12-15 minutes or until lightly golden.
Pistachio Cream

Prepare Pistachios
Soak the raw pistachios in water for at least 2 hours. Drain and blend into a smooth paste.

Make Cream
In a mixing bowl, combine the heavy cream, sugar, vanilla extract, and salt. Whip until soft peaks form.

Gently fold the pistachio paste into the whipped cream until well blended. Refrigerate until ready to use.

In a bowl, mix together the heavy cream and yogurt until smooth.

Chill Kaymak
Cover and refrigerate for a minimum of 4 hours or overnight to allow flavors to meld.

Cool Compote
Remove from heat and let cool before using.
Assembly

Layer the Tart
On a cooled sable cookie base, spread a generous layer of pistachio cream. Top with a dollop of kaymak and a spoonful of berry compote.

Finish by garnishing the tart with fresh berries.
