Prepare glass

If serving on the rocks, fill an old-fashioned glass with fresh ice and set aside. For a neat (up) presentation, chill a coupe or Nick & Nora by filling it with ice water while you mix the drink, then discard before straining.

Dry shake

Add Disaronno, Amaro Montenegro, Campari, Ardbeg Scotch, fresh lemon juice, and the egg white to a cocktail shaker without ice. Seal and shake vigorously for 20–30 seconds to emulsify the egg white and build a silky foam.

Wet shake

Open the shaker, add the ice cubes, reseal, and shake very hard for 10–15 seconds until the shaker is well chilled and slightly frosty on the outside.

Strain and serve

Double-strain the cocktail into the prepared chilled coupe (for up) or over the fresh ice in the old-fashioned glass (for on the rocks) using a fine mesh strainer to remove ice shards and ensure a smooth foam.

Garnish

Express a lemon twist over the surface to release oils and either rest it on the foam or discard and add a cocktail cherry. Optionally, if you want a subtle smoke accent, briefly rinse the glass with a few drops of Ardbeg before pouring (use sparingly).

Serve

Present immediately. The cocktail yields a silky, slightly bitter and nutty drink with a smoky backbone and a lemon-bright finish.
