Prepare the Glaze
In a bowl, whisk together soy sauce, honey, rice vinegar, Sriracha, minced garlic, and grated ginger until well combined.

Marinate the Bacon
Place the thick cut slab bacon in a shallow dish and pour the glaze over it. Make sure the bacon is well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Cook the Bacon
Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange the marinated bacon slices on the rack in a single layer, reserving any remaining glaze.

Bake
Bake in the preheated oven for about 25-30 minutes or until the bacon is crispy and caramelized. Brush with reserved glaze halfway through baking.

Rest and Serve
Remove the bacon from the oven and let it rest for a few minutes before slicing. Serve warm.
