Prepare the Fregola Salad
In a medium pot, bring salted water to a boil. Add fregola and cook according to package instructions until al dente. Drain and set aside.

Roast the Broccoli and Cipollini Onions
Preheat the oven to 400°F (200°C). Toss broccoli florets and sliced cipollini onions with olive oil, salt, and pepper on a baking sheet. Roast for 15-20 minutes or until tender and slightly caramelized.

Prepare the Salmon
Season the salmon fillets with salt, pepper, and a drizzle of olive oil. Place them on a separate baking sheet and roast in the oven for about 12-15 minutes, or until cooked through.

Combine Ingredients
In a large bowl, combine the cooked fregola, cannellini beans (drained and rinsed), roasted broccoli, and cipollini onions. Toss gently with lemon juice, olive oil, salt, and pepper to taste.

Plate a generous serving of the fregola salad on each plate, then top with a roasted salmon fillet. Enjoy!
