Prepare the Potatoes
Peel the large potatoes and cut them into thin, even slices, about 1/8 inch thick.

Rinse and Soak
Rinse the potato slices under cold water to remove excess starch. Soak them in cold water for at least 30 minutes to prevent browning and ensure crispiness.

Dry the Potatoes
Drain the soaked potatoes and pat them dry thoroughly with paper towels to remove all moisture.

Heat the Oil
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the potato slices in batches to the hot oil and fry for about 3-4 minutes, or until they are soft but not colored. Remove and drain on paper towels.

Increase the heat to high and return the partially cooked potato slices to the oil in batches, frying until they puff up and turn golden brown, about 1-2 minutes. Remove and drain on paper towels.
