Creamy Pepper Sauce

Prepare the Onion Rings
Slice the onions into 1/4 inch thick rings and separate them.

Make the Batter
In a bowl, mix the flour, cornstarch, baking powder, salt, and black pepper. Gradually add the beer or sparkling water until a smooth batter forms.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dip and Fry
Dip each onion ring into the batter, allowing excess to drip off, then carefully place them into the hot oil. Fry until golden brown, about 2-4 minutes. Remove and drain on paper towels.

Prepare the Creamy Pepper Sauce
In a small saucepan, combine 1/2 cup sour cream, 1/4 cup mayonnaise, 1 tsp black pepper, and salt to taste. Mix until smooth.

Serve the crispy onion rings hot with the creamy pepper sauce on the side.
