    Prepare the Onions

    Slice the yellow onions thinly.

    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown (about 30-40 minutes).

    Add Broth and Spices

    Once the onions are caramelized, add the bone broth, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for an additional 20 minutes.

    Prepare the Croutons

    While the soup is simmering, slice the French baguette into 1-inch thick slices and toast them until golden brown.

    Remove the bay leaf from the soup. Ladle the soup into oven-safe bowls, top each with a toasted baguette slice, and sprinkle gruyere cheese generously on top.
