    Remove the Kansas City strip steak from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for more even cooking.

    Generously season both sides of the steak with kosher salt and freshly ground black pepper. If using, add the fresh rosemary on top.

    Preheat the Grill or Pan

    Preheat your grill to high heat or a cast-iron skillet over medium-high heat. Add olive oil to the skillet if using.
