    Prepare the Steak

    Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30-45 minutes before cooking. This helps it cook more evenly.

    Season the Steak

    Generously season both sides of the steak with kosher salt and black pepper. Press the seasoning into the meat to ensure it adheres.

    Sear the Steak

    Heat a large cast-iron skillet over medium-high heat. Add olive oil and once it's hot, place the ribeye in the skillet. Sear for about 4-5 minutes on one side until a nice crust forms.

    Flip and Add Aromatics

    Flip the steak and add the garlic cloves and fresh rosemary to the skillet. Cook for another 4-5 minutes for medium-rare, basting the steak with the oil and juices in the pan.

    Check Temperature

    Use a meat thermometer to check the internal temperature. For medium-rare, it should read about 130°F (54°C).

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for 10 minutes. This allows the juices to redistribute.

    Slice and Serve

    Slice the ribeye against the grain and serve with the roasted garlic and rosemary draped over the top.
