Prepare the Filling

In a mixing bowl, combine shredded chicken, cream cheese, shredded cheddar cheese, chopped green onions, ground cumin, and salt. Mix until well combined.

Enchilada Assembly

Prepare the Tortillas

In a skillet, heat olive oil over medium heat. Lightly fry each corn tortilla for about 20 seconds on each side until soft. Remove and set aside.

Fill the Tortillas

Take one tortilla and spoon about 1/4 of the chicken filling into the center. Roll the tortilla tightly around the filling and place it seam side down in a baking dish. Repeat with the remaining tortillas.

Add Sauce

Pour the green enchilada sauce evenly over the filled tortillas in the baking dish.

Bake the Enchiladas

Preheat your oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes or until heated through and edges are slightly crispy.

Serving

Garnish and Serve

Once out of the oven, top the enchiladas with additional shredded cheddar cheese, a dollop of sour cream, and fresh cilantro. Serve immediately.
