Marinated Pork

Method

Marinated Pork

1

Prepare the Marinade

In a blender, combine the dried ancho and guajillo chilies (remove seeds and stems), garlic, cumin, oregano, salt, black pepper, white vinegar, sugar, and pineapple juice. Blend until smooth.

2

Marinate the Pork

Place the sliced pork shoulder in a large bowl or a resealable plastic bag. Pour the marinade over the pork, ensuring all pieces are well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Cooking the Pork

3

Cook the Pork

Preheat a grill or skillet over medium-high heat. Remove the pork from the marinade, letting any excess marinade drip off. Grill or cook the pork for about 8-10 minutes per side, or until fully cooked and slightly charred. Let it rest for a few minutes before slicing it into smaller pieces.

Tacos Assembly

4

Warm the Tortillas

In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

5

Assemble the Tacos

On each tortilla, add a portion of the cooked pork, followed by diced pineapple, chopped onion, and cilantro. Serve with lime wedges on the side.
