Burrito Preparation

Prepare the Ingredients
Gather all the ingredients and prepare each component: cook rice, heat beans (if using canned), and shred cheese.

Warm the Tortillas
On a skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable.

Assemble the Burrito
Place a tortilla on a flat surface. Layer it with 1/2 cup of cooked rice, 1/4 cup of beans, 1/4 cup of salsa fresca, 1/4 cup of shredded Monterey-jack cheese, and 1/4 cup of citrus slaw.

Add Sour Cream
Add a dollop of sour cream on top of the layers.

Sprinkle salt and black pepper to taste.

Roll the Burrito
Fold in the sides of the tortilla and then roll it tightly from the bottom up to enclose the filling.

Serve
Cut the burrito in half and serve with extra salsa and sour cream on the side.
