Instructions

1. Prepare the Cream Mixture

In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chopped white chocolate, stirring until fully melted and combined.

2. Mix Egg Yolks

In a bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and a pinch of salt until well combined and slightly frothy.

3. Combine Mixtures

Slowly pour the warm cream mixture into the egg yolk mixture, whisking continuously to temper the eggs and prevent curdling.

4. Strain the Mixture

Strain the combined mixture through a fine-mesh sieve into a large measuring cup or bowl to remove any lumps.

5. Prepare Ramekins

Preheat your oven to 325°F (160°C). Arrange six ramekins in a baking dish and distribute the fresh raspberries evenly among them.

6. Fill Ramekins

Pour the strained cream mixture over the raspberries in each ramekin, filling them about three-quarters full.

7. Bake the Crème Brûlée

Carefully add hot water to the baking dish until it reaches halfway up the sides of the ramekins. Bake for 30-35 minutes, or until the edges are set but the centers remain slightly wobbly.

8. Cool and Chill

Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, cover with plastic wrap and refrigerate for at least 4 hours, or overnight.

9. Caramelize the Sugar

Before serving, sprinkle a thin layer of brown sugar on top of each crème brûlée. Using a kitchen torch, caramelize the sugar until it forms a crispy crust.

10. Serve

Let the crème brûlée sit for a minute to cool slightly before serving. Enjoy your White Chocolate and Raspberry Crème Brûlée!
