Prepare the Ingredients
Slice the chicken breast into thin fillets. Clean and slice the mushrooms. Cut the artichoke hearts into quarters. Slice the zucchini into half-moons. Mince the garlic.
Sauté the Chicken
In a large skillet, heat the olive oil over medium heat. Add the chicken fillets and season with salt and black pepper. Cook for about 5-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
Cook the Vegetables
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the mushrooms and zucchini, and cook for about 5 minutes, until they are tender. Then, add the artichoke hearts and cook for an additional 2-3 minutes.
Combine and Serve
Return the cooked chicken to the skillet with the vegetables. Toss everything together and cook for another minute to heat through. Garnish with fresh parsley before serving.
