    Prepare the Ingredients

    Begin by flattening the veal cutlets between two sheets of plastic wrap using a meat mallet. Season both sides with salt and black pepper.

    Sauté the Mushrooms

    In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Add sliced mushrooms and cook until they are browned and tender, about 5-6 minutes. Remove mushrooms from the skillet and set aside.

    Cook the Veal

    In the same skillet, add the remaining butter and increase the heat to medium-high. Add the veal cutlets and cook for about 2-3 minutes on each side until golden brown. Place a slice of prosciutto on each cutlet during the last minute of cooking.

    Deglaze the Pan

    Remove the cooked veal and prosciutto from the skillet and keep warm. Pour in the white wine, scraping the bottom of the skillet to deglaze. Let it simmer for 2-3 minutes until slightly reduced.

    Combine and Serve

    Return the mushrooms to the skillet, add truffle oil, and stir well. Return the veal cutlets to the skillet to warm through. Garnish with fresh parsley before serving.
