Preparation Steps

  1. 1

    Prepare the Ingredients

Clean the chicken livers by removing any connective tissue and fat. Rinse under cold water and pat dry with paper towels.

  2. 2

    Sauté Onions and Garlic

In a skillet, melt a tablespoon of butter over medium heat. Add the chopped onion and minced garlic, sauté until softened and translucent, about 5 minutes.

  3. 3

    Cook the Livers

Add the chicken livers to the skillet and cook for about 5-7 minutes until they are browned and just cooked through. Add the red wine, thyme, salt, and pepper. Simmer for another 5 minutes. Remove from heat and let cool slightly.

  4. 4

    Blend the Mixture

Transfer the liver mixture to a food processor. Add the softened butter and eggs. Blend until smooth and creamy.

  5. 5

    Prepare for Baking

Preheat your oven to 180°C (350°F). Grease a terrine or loaf pan with butter. Pour the liver mixture into the prepared pan, smoothing the top with a spatula. Place the bay leaf on top.

  6. 6

    Bake the Terrina

Place the terrine in a larger baking dish filled with hot water to create a water bath. Bake in the preheated oven for 45-60 minutes until the center is just set.

  7. 7

    Cool and Serve

Remove the terrine from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight to fully set. Serve chilled with bread or crackers.
